I thought my Yokohoma Geolander HT-S were great(AND EXTREMELY QUIET), they even got me around moab.
That being said, I run 33"X12.5" Nitto's now (in the mud grappler variety)
I think that 265/70/16 is the best size beside the stock size,it shall give you a 1+ MPG,in city traffic bigger tires would decrease noticeable you mileage because of the weight it self,plus you'll have readjust the gauge/speedo too.

While I am sure I will here it from the die hard off-roaders here goes. I recently put on a set of Toyo Proxes S/T's in the stock size. I like the aggressive street tire tread, they were not to expensive, mileage is good, they are quiet and the grip on pavement is better than the other tires I have had.
Hmm I was looking at those for my 1g dsm. But wasn't to sure on road noise. I was going to get some BFGoodrich g-Force super sports for the VX, loved them on the 1.8t, grip was great and road noise was almost null. I'm currently running Hankook Ventus on the VX but upwards of around 80mph I get that annoying hum that you would normally get from most A/T tires...
