Most tires of that size recommend an 8"-10" rim. If I remember correctly, VX KAT got that warning when she mounted her 285/60/18 Cooper Zeon's, and I think the same is true for Nitto Terragrapplers (which many owners run) as well.
So it can be done - but should you? I dunno, but I've never heard of a member breaking a bead driving down the street.
they can almost certainly be fit onto the VX rims, many owners run 285/60s. i mounted a set on my factory rims that have a "rim protector" which is a little tighter fit to the wheel than most and had no problems
if you get shoulder wear on the tires, the manufacturer will probably blame the rim though, so as far as a warranty goes you may not get one.
during balancing if they did not seat correctly, it should wobble noticably so it can be corrected
