Amy and I just had our anniversary on Wednesday. Just 30 years behind you.
There's a trail in Glenwood Spring that I ran with Mark a few years ago. It's called transfer trail and it's long but you could turn around after the first section. The first section climbs up above Glenwood Springs and overlooks a canyon... very scenic. You could easily do the trail on your own, it's not too difficult.

Let me know where and when you guys will be around and I'll see if I can get down to G'wood to visit (if you aren't too busy with your lovely bride that is).
Like Jon said, the Transfer Trail is very nice, but the whole thing is pretty long. It starts out in G'wood but ends up over in Gypsum (I think). It's pretty much a dirt road the whole way, but the scenery is spectacular. Don't let the trail fool you though; it's the only place that Vicki has ever sustained any damage (and I've been to Moab six or seven times now).
